A hot minute ago, I talked about comfort foods on the air. In particular-- if you only could eat one food for the rest of your life, what would it be? And for a lot of you, it was mac n cheese. So, I mentioned that my mac and cheese is always a hit. One of you hit me up on the Klaben Auto Stores text line and asked me to share the recipe. So, by request, here it is:
Creamy Mac n Cheese
Ingredients:
8 oz. elbow macaroni (I prefer the mac with the ridges so the sauce clings to the noodle better)
1/2 cup all-purpose flour
1 tsp. dijon mustard
1/8 tsp. salt
2 cups milk (I use unsweetned plain almond milk)
1/2 cup grated Parmesan
8 oz. cottage cheese
8 oz. shredded Mexican cheese blend (I use Tillamook's)
4-6 sliced cheese (I use pepper jack when it's just me and the hubs; Munster when I host family or take to gatherings)
Instructions:
Cook and drain macaroni according to package directions for al dente. Grease a 13x9 casserole. Heat oven to 375. Combine flour, mustard, and salt in a medium saucepan and stir in milk. Bring to a boil over medium-high heat, stirring constantly. Remove from heat. Stir in Parmesan, cottage cheese, and shredded cheese. Add macaroni. Mix. Transfer to casserole dish, cover, and bake for 25 minutes. Top with sliced cheese and bake uncovered for 5 more minutes.
