My Menagerie

I will always have a soft spot for stuffed animals. They're so soft and adorable, and... comforting. Over the years, I've accumulated quite the menagerie. I've joked with my hubs that we need a 4th bedroom to accomodate my growing "zoo".

I had mentioned to my hubs in passing that Acme was selling large stuffed animals. A particular unicorn had caught my eye. I told him that if that unicorn was still around after the holidays, I would buy it on sale. Well, one of my Christmas gifts this year was... a stuffed unicorn! LOL

The little kid in me is so happy! And yes, I name all my stuffed animals. So please welcome, Ursula the Unicorn. I smile every time I see her.

Tinsel was once made of real silver: Tinsel goes all the way back to the 1600s. In Nuremberg, Germany, people used thin strands of real silver in their trees to reflect candlelight because they used real candles in their trees. And… since silver is quite pricey, we’ve got the dollar store stuff now.

It's All In The Name

So the Akron Zoo announced a new addition.   The birth of a white-cheeked gibbon.  
Congrats to the happy family.  Can't wait to see the new gibbon.   May I make a suggetion on the name.  

How about...  Billy F. Gibbon?  He would truly be the rockstar of the Akron Zoo...  and maybe the gibbon could grow a big ol' beard like the famed musician from ZZ Top all the better...   Read more on the new gibbon, Click Here.

Bridge Out

I love it when our town makes national news! In this case, Akron is in the spotlight for something strange that happened here. A bridge was stolen. A walking bridge. It was no longer being used, and was going to be repurposed by the city. But thieves just had to have them some bridge.

 

Who knew there was a black market for a bridge? So. Many. Questions.

Nutty

Some people aren’t eggnog fans. And that’s okay. Because this holiday drink is like eggnog, but better. Coquito is a Puerto Rican rum classic. It’s rich and heavy, and delightful. Enjoy!

Coquito

Ingredients
• 2 c. white rum
• 3 cans evaporated milk
• 1 15-oz. can cream of coconut
• 1 can condensed milk
• Cinnamon

Directions
1. Blend ingredients (except cinnamon) at high speed for 2 minutes.
2. Pour into an empty bottle. Cover and refrigerate the bottle for at least 4 hours, but preferably 2 to 3 days.
3. When properly chilled, serve in a small glass. Garnish with ground cinnamon.

Motley Crue has apparently sold their full catalog to BMG Music...  The reported sum was $150 million.   Click Here for details.

Crue lead singer Vince Neil was out at DrinksGiving this past weekend in Vegas...  remember he fell off stage recently and broke his ribs.  Some fans questioned his checkered past with alcohol and promoting the festival.  If questioning the festivals promotion of drinking.   Umm the fans were also questioning the sound of the songs.  Judge for yourself.

"Now I Have a Machine Gun"...

I opened a can of worms (purposely) on social media when I said the hubs and I were watching our favorite Christmas movie, Die Hard. For us, it's a tradition to watch on Friday night. Because on Thanksgiving night we watch Thankskilling (look it up-- horrible movie made in Ohio.) 

My husband sent me these pics one evening while he was getting dinner ready as I was still on the air with y'all. He's impersonating Hans Gruber right before the big fall. LOL

Stuff It!

I’m a Cheddar Bay Biscuit fiend. I’ll take home any extras when I’m at Red Lobster. I’ve bought the boxed mix and make my own. I serve them up for special dinners (like, all the holidays). And now, the Lobs has dropped a recipe for your Thanksgiving table.


Cheddar Bay Biscuit Stuffing


Ingredients:
12 each, or 8 cups, of Cheddar Bay Biscuits torn into small pieces
6 cups of bread cut into small cubes
1 cup of butter
2 cups of diced yellow onion
1 cup of diced celery
1/2 cup of diced carrots
1 tsp of dried sage
1/2 tsp dried thyme
2 tbsp fresh, chopped rosemary
3 3/4 cup of chicken broth
Salt and pepper to taste


Directions:
Preheat your oven to 300°F. Then, spread your Cheddar Bay biscuit pieces and cubed bread out on a large baking sheet and cook for 20-30 minutes, stirring occasionally until dry. Cool and put aside in a medium bowl. Then preheat the oven to 350°F. Heat your butter in a saute pan over medium heat. Once melted, add your celery, carrots and onions and saute until slightly softened. Stir in the herbs, salt and pepper into the vegetables and remove from the heat. Add mixture to cooled biscuits and bread. Fold all ingredients together and slowly add the chicken broth. Taste occasionally and adjust seasoning as needed.
Layer mixture into a greased 9×13 baking dish and bake for 20-25 minutes, or until golden brown on top.

Not Today!

Cows know. Some of them know they're gonna end up being a tasty burger in your belly. And some of them don't want any part of that destiny. Sometimes, a cow will make a run for it. Like this beauty in Brazil.  One cow escaped from a farm to an adjacent waterpark... and even took a ride down a water slide into a pool! After being rescued, and returned to its owner, the farmer gave the cow a reprieve. And, a name: Toboga, which means "slide" in Portuguese.

Winner, Winner

A way to a man's heart is through his stomach. I agree. Back in the day, I had a dish I would whip-up and serve to a suitor as a sign I wanted things to... progress. It was a chicken dish featuring bacon, melty cheese and honey mustard glaze. While this recipe from Ina Garten is known as "Engagment Chicken", I feel this is a delicious meal that anyone can serve to show affection to friends or family. No pressure for a ring! LOL Plus, some people just don't do turkey for Thanksgiving. This is a fab alternative. In fact this recipe is so good, I've broken my rule of never putting my hand in the cavity of any creature. 

Engagement Roast Chicken

Ingredients:

1 (4 to 5 pound) roasting chicken

Kosher salt and freshly ground black pepper

2 lemons

1 whole head garlic, cut in 1/2 crosswise

Good olive oil

2 Spanish onions, peeled and thickly sliced

1/2 cup dry white wine

1/2 cup chicken stock, preferably homemade

1 tablespoon all-purpose flour

Directions:

Preheat the oven to 425 degrees F.


Remove and discard the chicken giblets. Pat the outside dry. Liberally salt and pepper the inside of the chicken. Cut the lemons in quarters, place 2 quarters in the chicken along with the garlic and reserve the rest of the lemons. Brush the outside of the chicken with olive oil and sprinkle the chicken liberally with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Place the chicken in a small (11 by 14-inch) roasting pan. (If the pan is too large, the onions will burn.) Place the reserved lemons and the sliced onions in a large bowl and toss with 2 tablespoons of olive oil, 1 teaspoon of salt, and 1/2 teaspoon of pepper. Pour the mixture around the chicken in the pan.


Roast the chicken for about 1 hour and 15 minutes, until the juices run clear when you cut between a leg and a thigh. Remove the chicken to a platter, cover with aluminum foil, and allow to rest for 10 minutes while you prepare the sauce, leaving the lemons and onions in the pan.


Place the pan on top of the stove and turn the heat to medium-high. Add the wine and stir with a wooden spoon to scrape up the brown bits. Add the stock and sprinkle on the flour, stirring constantly for a minute, until the sauce thickens. Add any juices that collect under the chicken. Carve the chicken onto a platter and serve with the lemons, onions, and warm sauce.
